2 hot Italian beef sausages
Defat the sausage by pricking holes in it and microwaving it 1-1/2 to 3 minutes. (If frozen, use the longer time). Pour off the fat that is rendered from the sausages and wipe them down with a paper towel. Slice thickly and brown in a non-stick pan.

Wash and remove tips from the string beans and microwave them until crisp-tender. Add sausage slices and tomato sauce and other ingredients, if using. If you like you could soft sauté the onions and mushrooms. Cover and microwave at full power for about 2 minutes and serve.

Nutritional Info Per Serving: N/A
3/4 to 1 pound fresh string beans
Approximately 12 ounces Italian style tomato sauce
Onion, thinly sliced (optional)
Mushrooms, chunked (optional)
Fresh basil leaves (optional but good)
This makes a lovely spicy dish that doesn't heat up the kitchen and is very low carb. I am sure that, if you don't like spicy, you could use sweet Italian beef sausage. I would not make this with frankfurters as the taste combination would be all wrong.
