Meat Loaf, Low Carb (M, KLP, TNT)

2 lb. ground meat (leaness is up to you)
2 eggs
2 sweet carrots
2 onions
2 tsp. garlic powder

Grate the vegetables and combine them with meat. Beat eggs in glass and then put into meat. Add garlic powder.

Bake open (or closed if you prefer) using a 9"x13" pan. Mold meat into loaf shape. If you want, place raw, sliced potatoes around the meat loaf and put in water until potatoes are covered. Bake in a preheated 350°F oven for one hour or until it achieves the crustiness you prefer.

Poster's Notes:
Since my husband and me, when I'm good, are on a low carb regimen, I started making meat loaf like this and my kids also love it!
