Meat Loaf, Curried (M, TNT)

Serves: 4 to 6

1 onion
1 small carrot
1 tart apple
2 cloves garlic
1 egg
1/2 cup milk (I substitute water)
1 tbsp. soy sauce
1 to 2 tsp. curry powder
1 tsp sugar
1/2 tsp. salt
2 sprigs parsley
500g ground beef (about 1 pound)
1 cup rolled oats
1/4 cup sultanas

If you have a food processor, cut the onion, carrot and apple into quarters then process with the next 8 ingredients until they are finely and evenly chopped.

Mix in the beef and rolled oats and finally the sultanas.

Press into a lined loaf tin (see notes) and bake at 190°C (400°F) for 1 hour. OR cover pan with cling foil and microwave at Medium High (70%) power for 20 minutes or until loaf feels firm in the middle. Let stand for 10 minutes before slicing.

I recommend oven cooking if time permits, it develops the flavours much better.

Poster's Notes:
This is a TNT meat loaf recipe which we love. I cook it in a loaf pan or, patted into shape, in see-through roasting bags so I can add potatoes and other vegetables which adds to their flavour.

It freezes well when cooked so I often double the recipe and divide into two or three loaves.
