Lumpia (M, TNT)
Source: Egg roll wrapper package
Serves: 4 to 6 (Yield: 30)

1-1/2 cups ground beef or shredded chicken
1 cup cabbage, shredded
1/2 cup carrots, shredded
1/2 cup mushrooms, shredded
1/2 cup bamboo shoots, shredded
1/2 cup celery, diced
1 package of wrappers (the paper-thin kind)
1 tablespoon soy sauce
1 tablespoon cornstarch
1 tablespoon water
1 teaspoon salt
Dash of pepper
1 tablespoon flour
1 egg white

Make Gravy:
Mix together soy sauce, cornstarch, water, salt and pepper.

Make Filling:
Stir fry all ingredients with oil for 5 minutes. Add gravy and cook for an additional minute. Cool and drain.

Make Paste and Assembly:
Mix flour and egg white.

Roll up filling with completely defrosted egg roll wrappers (uncooked side up). Seal end with paste.

Deep fry, 375°F in 2" of oil.

Poster's Notes:
I made some Lumpia for dinner tonight. They are a small Philippine eggroll.
