London Broil II (M, KLP, TNT)
Source: The Fanny Farmer Cookbook
Serves: 3 to 4

1 clove garlic, peeled (optional)
1-1/2 pounds steak
1-1/2 tbsp. KLP vegetable oil
Salt
Freshly ground pepper

For Marinade (optional):
3/4 cup red wine
1/4 cup oil
1 small onion, chopped
1 tbsp. oregano, crumbled
1 tsp. salt

Preheat the broiler.

If you want a garlic flavor, rub the clove of garlic vigorously on both sides of the steak.

Rub with oil and place the meat on a rack over a drip pan. Broil 1-1/2" beneath the element 4 to 5 minutes each side for medium, 3 to 4 minutes for medium-rare.

Remove, sprinkle with salt and pepper, and carve diagonally across the grain into thin slices.

For Marinated London Broil:
Early in the day, mix marinade ingredients. Marinate the steak in this mixture until ready to cook.

Remove, pat dry with paper towels, and follow the recipe above, eliminating the salt, pepper and garlic.
