Burgers, Leek (Keftes de Prassa) I (M, KLP, TNT)

Yield: About 20 small patties or 4 large ones

1 bunch leek
1/2 cup matzo meal
1 pound ground beef
1/2 teaspoon salt
2 eggs
1/2 teaspoon pepper

Wash leek and boil until soft. Note: it is very important to boil the leeks until they are completely mush- at least an hour. That ensures that they mix well with the meat.

Grind or mince cooked leek and mix with ground beef. Blend in eggs, matzo meal, salt and pepper and mix all ingredients well.

Form mixture into patties and fry in (corn) oil until crisp.
