Corned Beef and Cabbage, Crockpot (M, TNT)
Source: Pillsbury's Slow Cooker Meals
Serves: 8

6 medium carrots, cut into 1" pieces
2 onions, chopped
1 2-pounds corned beef brisket with seasoning packet
1 12-ounces can beer
Water
8 thin wedges cabbage

In 4-to 6-quart crockpot, combine carrots and onions. Top with beef brisket and sprinkle with seasonings from packet.

Pour beer over brisket and add enough water to crockpot to just cover brisket. Cover crockpot and cook on low setting for 10 to 12 hours.

Remove corned beef from crockpot and cover with foil to keep warm.

Add cabbage wedges to vegetables and broth in crockpot. Cover crockpot and cook on high for additional 30 minutes or until cabbage is crisp tender.

To serve, cut beef across grain into thin slices. Remove vegetables from slow cooker with slotted spoon and serve with beef. Serve cooking juices over servings.

Poster's Notes:
I prepared corned beef just the other day in the crockpot and it was terrific.
