Knishes, Asian Fusion (P, TNT)

Dough:
1 to 1-1/2 cups potatoes, mashed
1 egg, lightly beaten
1/2 to 2/3 cup flour

Filling:
Leftover vegetarian "meat" stuffing from Asian Fusion Kreplach (click here for recipe)

Preheat oven to 375°F.

Make Dough:
Mix potatoes, egg, and flour until workable dough, a little wet but workable. Dip hands in cold water, take about 1/4 cup dough and flatten into disk.

Assembly:
Put a heaping tablespoon of "meat" onto disk and mold into round knish shape. Repeat until finished.

Bake for 20 minutes.

Poster's Notes:
I get bored making the kreplach, so usually end up with some leftover "meat." Since I already had leftover mashed potatoes (with whole grain mustard) from last night's dinner, I made knishes. Measurements are estimated!

These came out with a crisp crust, soft potato insides stuffed with the savory fake meat. Very interesting!
