Gazpacho Salad, Molded (P, KLP)
Source: "Celebrate Low Carb"
Serves: 7 (Yield: 3-2/3 cups)

1-1/2 cups sugar-free tomato juice
1 small package lemon-flavored sugar-free gelatin dessert
1 cup finely chopped tomato
1/2 cup finely chopped cucumber
1/4 cup finely chopped green pepper
2 tablespoons finely chopped red pepper
2 tablespoons thinly sliced green onions
2 tablespoons vinegar
1/4 teaspoon black pepper
1/8 teaspoon garlic powder (optional)
Nonstick spray

Bring the tomato juice to a boil in a small saucepan. Completely dissolve the gelatin in the boiling tomato juice. Chill until slightly thickened.

Combine remaining ingredients in a medium bowl; mix well. Stir into gelatin mixture. Pour into individual dishes or a medium serving bowl or mold. (If using a mold, spray lightly with nonstick spray first.) Chill until firm, a minimum of 3 hours.

I just got this off my low carb list and thought some of you might be interested. For the record, I just asked the Rabbi in charge of the list if I could substitute lemon juice for vinegar.
