Salmon and Cucumber Rolls (P, TNT)

1 English cucumber
10 slices smoked salmon
prepared one horseradish
pickled ginger, cut into thin strips

Trim ends of cucumber; cut cucumber into 5" lengths. Using vegetable peeler (or a special slicing tool/machine), cut cucumber lengthwise in very thin slices.

Cut salmon into 3" long strips of same width as cucumber slices. Thinly spread each cucumber slice with horseradish, then top with a salmon strip. Place a few strips of ginger on one end of each cucumber slice.

Roll up, beginning at ginger end. Secure rolls by dabbing each "seam" with horseradish, and press lightly. Place rolls on platter, with ginger facing up. Serve immediately.
