Fish Cocktail II (P, TNT)
Source: adapted from can of Old Bay Seasoning
Serves: 4

8 oz. frozen mock crab, thawed
1-1/4 tbsp. poultry seasoning (such as Old Bay seasoning)
1-1/5 tbsp. kosher salt
1 cup water
1 cup white vinegar
1/2 head iceberg lettuce, shredded
Commercially prepared cocktail sauce
Lemon wedge for garnish

In a small saucepan, add water, vinegar, seasoning. and salt. Bring to a boil. Add mock crab. Boil about 10 minutes. Turn off burner and let sit to cool about 1/2 hour.

Drain liquid; chill mock crab.

To serve, mound shredded lettuce on plate and top with mock crab. Add dollop of cocktail sauce on side of dish and garnish with lemon wedge.

Poster's Notes:
It is a bit spicy. If you don't like spicy food, reduce the amount of seasoning and make your own cocktail sauce from ketchup and horseradish. Add a few drops of lemon juice or white vinegar to cocktail sauce to pull it together.
