Egg Salad, Lower Fat (P, KLP, TNT)
Source: Adapted by me from the book "In Miriam's Kitchen"
Serves: About 6

1 onion, sliced
4 cups sliced mushrooms
10 hard boiled eggs, separated, 5 yolks discarded
3 tablespoons low-fat mayonnaise
Oil
Salt and pepper to taste

Caramelize onions slowly in oil, towards the end, toss in in mushrooms and brown.

Place onions and mushrooms, eggs, and mayonnaise in a food processor (or otherwise hand chop) to finely chop, then salt and pepper to taste. Chill and serve.
