Egg Rolls, Baked (M/P, TNT)

Baking Spray
Bagged cole slaw mix
Shredded carrots, zucchini, mushrooms, onions
Bean sprouts if on hand
Shredded chicken (optional)
Garlic, either powdered or minced (optional)
Ginger, either powdered or minced (optional)
Soy Sauce
1 or 2 tbsp. olive oil
Egg roll wrappers

Spray a large frying pan with baking spray. Add the cole slaw mix, any vegetables, chicken (if using), garlic, and ginger. Drizzle with soy sauce and olive oil. Cook the mixture on medium heat until the cabbage is soft and wilted, then cook for approximately 5 minutes more.

Put a tbsp. or two of the mixture along one edge of the egg roll, fold the sides in perpendicular to the vegetable mixture (some of the mixture will now be covered), then roll the wrapper, starting at the end with the vegetable mixture (the directions were on the back of the egg roll wrapper package). Place on a baking sheet.

Cover all the egg rolls with baking spray. Bake until they are a dark golden brown.
