Eggplant Salad, Mom's (P, KLP, TNT)
Source: Adapted from my mother's recipe
Serves: 6 to 8 as an appetizer

2 eggplants, peeled and sliced into 1/2" thick slices
Lemon juice, for brushing
Olive oil, for brushing
1/2 of a small-medium onion, diced
2 garlic cloves, chopped
2 to 3 tbsp. mayonnaise
3 hard-boiled eggs, chopped
Salt, to taste
Pepper, to taste

Brush the eggplant slices with lemon juice and olive oil. Fry or bake the slices at 375°F, or until they just start to brown. Let cool.

Chop up the eggplant, and add the rest of the ingredients. Mix well.
