The Cheesecake

Many years ago I was on a ship sailing from Vancouver to Alaska. My husband and I shared a table with two nice ladies.

At the end of one dinner the waiter offered a selection of desserts, one of which was cheese cake. One lady remarked that she ate only her friend's cheesecake because it was the best in the whole world.

So of course I asked for the recipe, which she gave me from memory and I wrote down. The next morning as we were disembarking she rushed up to me and said, "My Dear, I am really not sure I wrote it correctly, so please give me your address and I will send it to you."

We spent a month in Alaska, and then traveled in the Pacific Northwest for a while so it was some time before we got back to Florida. And would you believe the recipe was in our mail.

I will tell you the secret of her success was never to peek by opening the oven door, and to leave the cake in the oven, without opening the door, OVERNIGHT. Made it a few times and it works.
